Giling Basah Coffee Cherry Process Traditional Indonesian Style of Processing Coffee Cherry. Unlike the Semi Washed or Full Washed Method, there is no fermentation process in the Giling Basah Indonesian Style. Red Coffee Cherries are soaked in water, the ones that are drowned are used and the ones that are floating, is thrown away. The coffee is then taken out from the cherry and sun dried. The skin parchment of the coffee bean will be dried and crispy. After removing the skin using traditional method or machine, the coffee bean will once again be sun dried untill its moisture level becomes dry. This method brings out a fine balanced of clean, fruity taste, well balanced body and aroma.
