Aloy Modern Thai, a new restaurant that occupies the space that was home to Trillum for five years, bucks the trend, aiming instead to offer Thai cuisine — a collection of both familiar and innovative dishes — in sleek and sophisticated surrounds. And the Bangkok-born owners (and sisters), Arisa Chanchokpong and Bo Bean, who also own, along with their mother, Aloy Thai in Boulder, feature a menu that, says Bean, “is lighter, fresher, and healthier than the Thai food found in most Thai restaurants in Colorado.
