Vietnamese Traditional Sticky Rice with Prawn Wrapped and Steamed in Banana Leaf (Xoi tom cuon la chuoi) by Kim from Admin

Just as congee is the traditional Chinese breakfast, in Vietnam it is common to start the day with a bowl of sticky rice. This recipe for prawn sticky rice consists of prawn cooked with sweet glutinous rice and coconut milk.

Preparation: 10 min

Cooking: 30 min

 

JJ Ingredients:

FIS376­_Ocean Catch IQF Raw P&D Vannamei (16/20) King Prawn-1x1kg

SPI392_Schwartz for Chef Ground Black Pepper-1x400g

OIL034­_Gomo Extra Virgin Olive Oil-1x5L

SPI344_Natco Hulled Sesame Seeds-1×1.5kg

SPI294_KTC Desiccated Coconut-1x2kg

 

Other Ingredients:

Sticky rice 500g

Chinese mushroom and fungus

Banana leaf

Coconut milk

Shaoxing wine

Chicken bouillon

Onion

 

Decoration:

Carrot , spring onion and cherry tomato

 

Step 1:

Cook sticky rice in rice cooker with same amount of water for 15 minutes until rice can see through.

Step 2:

Put coconut milk on and steam for another 5 minutes.

Step 3:

Chop prawn, chinese mushroom, fungus and onion to small pieces.

Step 4:

Put all in frying pan with some oil, chicken bouillon and shaoxing wine until its cooked.

Step 5:

Reheat the sesame seed.

Step 6:

Take 2 banana leafs put cross and brush olive oil on top then apply all ingredient such as sticky rice, prawn stir fry, sesame seed, desiccated coconut.

Step 7:

Start to wrap all up.

Step 8:

Put the wrap into steamer and steam for 15 – 20 minutes.

Step 9:

Now food is ready… enjoy…!!!
