Where is it ? Is this a beauty salon ?
This is the question I had when I stood at the entrance of this ramen shop.

I have a self‐satisfied way of thinking that yummy ramen shops are often not decent on appearance and tends to be what we call hole-in-the-wall kind.

As can be imagined from the entrance, here Hanabusa is a decent ramen shop with bright interior with white base color. This is a stark contrast in the age of lots of new comers are presenting something robust and conspicuous with black or red color.

Now about the ramen. Roughly 2 kinds of ramen are served. One of them is salt taste broth and another is soy sauce taste. From these lineups their direction is clear. Both are very basic and traditional broth with long history. From its name which means calyx in Japanese also, traditional Japanese ramen is what they are seeking for.

I'm a kind person who loves thick and spicy both. But I also like light broths as served here. Anyway, I ordered salt ramen with egg topping.

The broth is relatively clear with some oil seen on surface. Generous size of beautiful Cha siu is on top. Noodle is thin straight type which I thought would be perfect to this type of this broth.

The broth is light at first sip but deep taste coming from various base ingredients follows. Salt ramen in many cases based on many ingredients like kelp, fish, chicken bones and vegetables. Because of this, its taste could be unexpectedly mixed and deep compared with its clear appearance.

Cha siu is quite tender and lightly seasoned. At the point only broth is left, I made a bowl of Ochazuke with the broth and Arare and Wasabi on the table. This is a recommended way of finishing of ramen at this place and rice is complementary at lunch time.

Ramen broth and white rice are perfect combination and this is what I am doing at other places also. But I felt a bit naughty for this deed, good to have an endorsement. :D

But finally one thing, the ending time of lunch time shown on their web was later than actual time. So I had very short time for eating. The staff appeared passive agressive to rush me out. So I had to finish in time-pressured atmosphere. This was a big issue for me and hope to have the wrong information rectified promptly.
