Keeping the tradition of the artisan bread makers, we use natural starters that unlock and intensify the flavor of a grain during a slow fermentation process. These natural techniques are very different from adding commercial yeast in order to hasten the time it takes for the bread to rise and adding lard or oil in order for the product to last longer. The techniques we master allow us not to add any added fats or preservatives, which is one of the biggest things we pride and help set us aside from your traditional bread makers.

Excellent breads, especially the ciabatta. Best ciabatta in Chicago.
Try their crackers and many other delights! Almond croissants are wonderful. Division Street Farmers' market (go early before they sell out). I go every Saturday to buy the bread. Slice it and freeze it. The master baker (a microbiologist) knows his yeast!

Montélimar had a representative slinging bread at the 61st street farmer's market on Saturday in the northeastern part of the Woodlawn area. We stopped by and got some goodies for breakfast, and we were so glad we did!
They had a quite impressive array of breads -- chocolate and almond and plain and spinach and feta croissants, pizza/tomato focaccia, danishes, baguettes, sourdough, and more. The man running the stall was a touch surly, but it was all worth it for some truly delicious bread.
I got myself an almond croissant. It was packed with beautiful layers upon layers, covered in lightly toasted almonds and powdered sugar, and had a perfectly balanced sweetness. It was divine! I tried a bite of my friend's spinach and feta croissant and it was also absolutely delicious. Generous amounts of spinach loaded into super light, buttery bread.

Just went back to their booth at the farmer's market today. Got one almond croissant and one danish. The almond croissant was crunchy and hard. The danish was dry and hard. Really disappointed I spent five dollars each on items my husband and I both took a single bite of. We're definitely willing to buy from them again but I can't help but feel like I wasted ten dollars. I'd prefer to buy things from a place that I know will be consistent. Such a bummer after a couple really good experiences.

The person at the booth was very friendly and we had a nice time chatting. I bought a morning bun, a blueberry cheese danish, and a loaf of seed bread. Almost everything was consumed by just me and my husband on the same day... It was that delicious. I ate the danish as soon as I got home. My husband was not in love with the morning bun. I think the person described it as being like a cinnamon roll? It's just a different style that we don't like but someone else might. We like them thick and moist but this just seemed to be a different style that is not our taste.
The real star of the show was the loaf of bread. It has sunflower, sesame, flax? seeds. I don't know if that's all. The bread was so soft and tasty. We ate the majority of that loaf with whipped honey butter for dinner because it was so delicious.

I absolutely loved the tasteful savory Mushroom Tarte which had sauteed mushrooms, seasoned caramelized onions and goat cheese. Very fulfilling. I came across their goods at a farmers market but they mainly do wholesale and individual orders call 847-563-8193 because I had to order more croissants!!! They are located in Evanston. I also tried their large cinnamon walnut raisin croissant. It's so good and reminds me of a cinnamon roll.
