Message from Veronica

Since I was a child, I’ve always been curious about cooking. Whenever the big fiesta arrives in our town while most kids were out playing, I was in the kitchen lurking and watching the out of town cooks from the province. My dad’s sister (Tiya Rosing) played a huge role in my cooking technique, she taught me that patience is the number one virtue in cooking along with my two Aunties Luding and Gloria whom were my go to answer whenever I was not sure in putting together a daily dish. My relatives in Pampanga also taught me how to flavor meat and tenderize it and with those cooking lessons learned, I began making wonderful dishes.

But of course it wasn’t an instant success – my father was my huge food critic. He would check out at the dish I cooked while I placed it on the table and started shaking his head. Since then I tried hard to satisfy my father’s high expectations. He would raise chickens for months and to serve in time for the holidays and fiesta – that’s where I learned how to slaughter chickens, pluck their feathers and prepared them for various chicken dishes.

Cooking for my family daily improved my cooking through the years then I started cooking for huge parties, such as birthdays, baptismal, graduations, weddings, funerals, local church functions and other events. Then my catering business came along and things really took off. I welcome advise I receive from people I meet along the way specially from the elders and of course from my very own mom Angelina and sister my Agnes. I also explored my cooking in Italian cuisine which I make for my husband John and my in-laws Dominic and Sally. I continue watching cooking blogs and videos to get new ideas then apply my own take of what I’ve seen and voila – success!

Opening Manila Eats will be a huge accomplishment and dream come true and I hope that my home cooked meals will contribute and add new flavor to the growing and improving diverse community of the Tampa Bay area.

Many people constantly looking for Pilipino Food wants to eat in the Pilipino dish because the food is very delicious and the amount of the food is not expensive. Now we have one opening soon in Riverview “Manila Eats” is one of the best Pilipino food truck/ restaurant in the Riverview. The location was new but we’ve been ordering/catering food from the owner Veronica for quite some time now.

The Palabok was to die for the sauce is Authentic.

The Coyote with Shrimp and ground pork delish😋 Nomm..Nomm..Nomm.. You don’t need to be an Asian to love this dish.

The Lechon/Crispy Pata was well season, tender and the skin was crunchyyyy.

The desert Leche Plan with a touch of coffee flavor is the best. I told my kids  it’s the Crème Brulee of the Philippines 🇵🇭 

Food was delicious, would definitely go out of our way to go once they open the “Manila Eats” in Riverview, Fl
