A dark and brilliant ruby red colour with an intense aroma reminiscent of ripe red fruits, black pepper, tobacco and cocoa, with a pleasant note of balsamic vinegar and just a hint of Mediterranean herbs. A warm and well-balanced palate with a clean and dry finish.
Pair with mature cheeses; succulent cured meats such as “Soppressa Veneta” (a particular Venetian salami); risotto; red and generally heavier meats; braised meats; game; also suitable to be served with aromatic fish dishes such as risotto with shellfish.

The grapes are gently pressed on the day of the harvest to produce a fragrant and fresh wine. In March, it is fermented a second time with the pomace of the Amarone (the ‘ripassato’ process), which gives it more flavor and structure. The aging process lasts 20 months and takes place in small French Oak barrels.
