Afternoon Tea Masterclass
Class experience
I have a very interactive teaching approach. I will invite learners to share their prior knowledge, of which they need none other than basic kitchen hygiene and they may need assistance in weighing out ingredients before the class. Also they may need assistance in setting the oven correctly. I engage learners in sharing what they know, any tips and tricks they can share with the group and how they would like to further develop their baking skills, and what recipes they have had success with...
I have cooked and baked for my family and friends for almost 25 years, this includes celebration cakes and food items for regular spreads at home, donations to daycare and children's school as well as my workplace.
A clean kitchen and access to a sink and plenty of work space Chopping board Bowl/Mixer bowl Self-raising/all purpose flour Butter 4 eggs Caster sugar (sugar for plain cake baking) Baking powder Milk Raisins/sultanas/chocolate chips Icing sugar (used for frosting - optional) Jelly (UK: "jam") Sliced bread of choice Sandwich fillings of choice which could include: cucumber, soft cheese/Philadelphia, tuna mayo, egg mayo salad, prawn salad, sliced cheese, pate An oven, baking tray with parchment paper or cupcake tray and cupcake paper cases, melted butter for greasing 2 x 8" baking tins, cooling rack, a cup, measuring scales, plastic food wrap, kitchen utensils including a spatula, spoons, electric mixer too. A torch may also be useful - if we are all muted while the blenders are going and one of us needs to speak we can get each others' attention! Once enrolled I will send out a detailed list of the weighted ingredients for you to weight them out ahead of time and make the most of your Afternoon Tea Masterclass!
Attention to using knives to cut the sandwiches and use of an oven. Highlighting kitchen safety will be underpinned throughout the entire class as well as the importance of the patience required in leaving things to cool as well as the danger of leaving knives in the sink to wash up later. Food poisoning will also be discussed and we will discuss how we can avoid this occurring in daily life. Eggs and milk are used in the recipes but can be switched for egg replacer and soya milk. Equally gluten-free bread will work in place of standard gluten bread, as well as flour replacement if required. Learners are invited to choose their own sandwich fillings according to their preferences.
