We deliver satisfaction worthy of the highest rice polish. With a high-precision rice polish rumored to be perhaps the best in Japan, Dassai23, often featured in books and on television, has gone through a great deal of drama.
This sake was planned with the idea of creating a sake with the highest rice polishing ratio in Japan. The original plan was to make a 25% rice polishing ratio, but when we were informed that a major manufacturer had a 24% Daiginjo on the market, we decided to go even further than that and try for a 23% ratio.

The 23% rice polishing ratio, which is the origin of Dassai23's name, is considered the highest polish for rice in Japan, I fear. However, we do not believe that the highest rice polish makes it great. We are not satisfied with this number, but seek the best taste of sake in Japan. The gorgeous, dense aroma, mellow flavor, and moderate acidity that pulls the whole thing together, all of which balance each other out and slide down the throat. We are always striving to create a sake that has a gorgeous aftertaste and a long-lasting aftertaste.
