Booked reservations to the place on whim our first night in Amsterdam and so happy that I did. Needless to say everything was delicious but it especially blew my mind how unique and fresh the flavors were. I tried the tempura appetizer they were the absolute best. I highly recommend the red and white ramen sauce , it has a great balance of creaminess and spicy and very well balanced. The ambience is very uniquely intimate,there are limited spots and everything feels so personalized and service is very friendly. I would highly recommend!!!

Absolutely top-notch vegan ramen, amongst the best I've ever had. It's well worth planning in advance and booking this place for lunch or dinner.
You usually have to book at least a day or so in advance to eat here due to the demand. We booked a lunch reservation (€10 deposit per person -- deducted from the meal charge). The way it works is you pick from 1 of 5 "sauce ramens" or 1 of 2 more soup ramens. (They have complementary water and hot tea.) The sauce ramens are not soups but creative Japanese noodle bowls. My wife got the Red Hot Chili Pepper (€15) sauce ramen, and I got the Taso ramen black (€18) and added extra spicy sauce (€1) to it that they bring out on the side. We also got 4 pieces of takoyaki (€4) -- traditionally an octopus dish but obviously this one was vegan.
The takoyaki came out first and was tasty, though nothing all that special. Nicely fried, doughy and tasty. My wife's sauce ramen came with what looked like fettuccini-style noodles, served with a very rich, nutty sauce, chili oil, corn, green onions, and a few other toppings. The bit I tried was pretty incredible, and my wife was extremely happy with it.
My ramen was simply phenomenal. Coming from Vancouver, we are spoiled with amazing ramen places, so I'm often disappointed when travelling (as I had been by 2-3 other Amsterdam ramen places). Well, this ramen was incredible. The broth was miso-based, rich, complexly spiced and amped up nicely by the chili oil. The noodles were thin and perfectly cooked, plentiful and filling. The toppings were a bit lacking, but still tasty, with some sort of crisp cabbage, corn, cilantro, and pickled onion, served with a side of two big pieces of katsu, which were delicious. Top-notch stuff.

Delicious vegan ramen set meal. Make reservations ahead of time! We got lucky with a reservation only 2 days prior but don't rely on luck! We tried both the katsu (seitan and vegan shrimp) and tempura (eggplant and zucchini) options which were delicious. First course of the meal had pickled cucumbers, sesame tofu, and a cashew paste. The second part came with takoyaki, potato mochi, lentil ball, and a thinly fried tofu (forgot the name). Ramen is served dry with sauce with wider, fettucine-like noodles. Just fyi their sauce is made with lentils, in case of allergies.

Omg. This was one of the best ramen places I've ever eaten. Great food. I imagined I was in Japan.
The service was very personal and attentive. They pay attention to anything you need. They are very proud of their product.

High quality ingredients, and extremely thoughtful flavor combinations. Great example of what plant-based cuisine can be.
Owned and operated by a very impressive one-man-army. The menu has several small to large plate options, and you simply add up for a specialized menu. In total you get 25 points (€25) and spend certain amounts on small plates and main courses. So say one large main, and 2 side. Or small main and 4 sides, etc.

This place is amazing! The amount of creativity that went into the business is pretty incredible. You get a certain amount of 'points' when you order (if I remember correctly) so that you can pick certain appetizers/dishes or add-ons. The chef was charming and the food was great. Will definitely return next time we're in Amsterdam.

We made reservations for men Impossible two weeks in advance as this place only works on reservations. What a great dining experience it was . One man catering army Atsushi is the chef, the waiter, and all else that is required and taken on by others in a dining establishment. He is a very gracious host that seats you and explains in detail how the menu works and where everything like drinks and hot tea is situated. Then he runs back to the kitchen to cooks the most delicious ramen and starters you could want. To order you check the box of the combination of starters and ramen you desire . You can add noodles as well if desired. It's a different way to order but different is good and it works . We had the super spicy ramen and the super garlic ramen. Our starters were a well presented delicious beginning. The presentation was a simplistic and delicate homage to Japanese cuisine. Each small starter was amazing in its intricate flavors. An impressive start. The Ramen was so well presented it was a shame to eat it . Colorful and ample with home made noodles and fresh ingredients all made by this one man dining machine. The taste was excellent, all the unique flavors came together to create a well balanced and perfectly seasoned bowl. The food was correct temperature and atsushi explained each course in detail. I would recommend anyone who wants a true plant based dining experience to come to men Impossible. The best Amsterdam has to offer!!

Food was excellent. Even though there wasn't any broth, this was some of the best ramen I've ever had. Would recommend!
